The female bird has a single ovary. When an ovum is released into the oviduct and fertilized, that's the yolk. The albumen grows and that whole thing develops membrane layers, then calcium carbonate that are deposited on to those layers, then pigmentation, if any, then a final protein layer before the egg is laid. It takes about 24 hours.
